Lighter Fare

At this time of year, eating light can be a bit challenging. Everything tastes so darned good! LB and I made this eggplant parm a few weeks ago before a party so that we didn't pig out once we got there and it was fabulous. He says that I shouldn't recommend it as a main course, but I found it way more than enough as a main - just serve with a salad and you're aces.
